WEIGHTS AND MEASURES
If you don’t have a set of scales ...
1 flat tablespoon = 15g of butter, sugar or rice
RICE: One portion of rice (100g) = ½ mug
A mug of rice is good for 2 people.
POTATOES: Count on 3-4 medium-sized potatoes (500-600g) per person
QUINOA: Count on 80g per person (1/3 mug)
COUSCOUS: Count on 100g per person (½ mug)
PASTA: Count on around 130-150g per person. For spaghetti, one portion is the size of a ponytail. Use thin pasta (spaghetti/fettuccine/linguine) for liquid sauces and thick pasta (penne/rigatoni/conchiglie) for chunky sauces.
OVEN TEMPERATURES
WARM: 170°C = 350°F = Gas Mark 4
MEDIUM: 190°C = 375 °F = gas Mark 5
HOT: 220°C = 425 °F = gas Mark 7
VERY HOT: 240°C = 475 °F = gas Mark 9
COOKING TIME
A roast chicken takes 20 minutes per 500g plus 20 minutes;
so for a 1.5kg chicken, it will take 1 hour 20 minutes at 190°C.
A soft-boiled egg takes 3½ minutes in boiling water.
A hard-boiled egg takes 10 minutes in boiling water.
2cm-thick Hamburgers take 3-4 minutes per side for medium, 2 minutes per side for rare and 5-6 minutes per side for well done.
