

Tzatziki
It’s almost summer, exams are over, you are lolling around the apartment thinking how you can afford the airfare to Barcelona when you come across a cucumber and some yoghurt at the back of the fridge. This cooling Greek dip is great with strips of pita bread or toast.

Preparation time: 20 minutes
Ingredients (serves 2)
1 cucumber
1 clove of garlic
200ml of natural yoghurt
Salt and Pepper
2 spring onions
½ lemon
6 mint leaves (optional garnish)
Equipment
Mixing bowl
Sharp knife
Chopping board
1. Peel the cucumber, chop off the tips at either end and cut into 1/2cm disks.

2. Finely chop the garlic and Spring onions.
​
3. Pour the yoghurt into a mixing bowl and stir in the cucumber, garlic and onions.
​
4. Transfer to an attractive dish, add a pinch of salt and pepper and decorate with the mint leaves.
