Tiramisu
Tiramisu is Italian for ‘pick me up’, maybe because of the rejuvenating-effects of the coffee-soaked savoiardi ladyfingers. This simple version is a perfect teatime treat or late-night dessert. The fingers are called Boudoirs in French, Löffelbiscuits (spoon biscuits) in German and kedi dili (Cat’s tongue) in Turkish.

Ingredients (serves 4)
30 sponge fingers
A mug of strong, cold coffee
400g of cream cheese, Philadelphia or mascarpone
2 tablespoons of milk
200g chocolate spread
A teaspoon of cocoa or chocolate powder (optional)
Equipment
High-sided serving dish
Mixing bowl
3 dessert spoons
1. Dip sponge fingers in the coffee and line the bottom of the serving dish with them.
2. Cover with a layer of chocolate spread.
3. Mix the milk with the cream cheese in a bowl and spread a layer over the chocolate.
4. Repeat the alternate layers of sponge fingers, chocolate and cream cheese, finishing with a layer of cream cheese.
5. Sprinkle some cocoa powder on top and maybe some grated chocolate to add a little finezza.
6. Chill in fridge for at least 2 hours.
