Sweet-potato tortillas
Best eaten hot when the beans are squidgy, the sweet potato still a little crunchy and the cheese has just melted. For those interested, Cheddar cheese melts at around 66°C (155°F).

Preparation time: 20 minutes. Cooking time: 10 minutes.
Ingredients (serves 4)
1 medium-sized sweet potato
200g of white beans
100g of grated cheese
1 red onion, peeled and cut up into small pieces
1 teaspoon of paprika (or half a red chilli)
1 tablespoon of honey or maple syrup
Salt and Pepper
8 pre-made tortilla wraps

Mixing bowl
Masher

1. Grate the peeled sweet potato into a mixing bowl.
2. Add a tablespoon of oil to frying pan on medium heat, add chopped onion and fry for 3 minutes.
4. Add sweet potato mixture and a teaspoon of honey and fry for 5 minutes until the sweet potato is soft.
5. Pour mixture into a clean mixing bowl and add the drained white beans, adding a pinch of salt and pepper and mash together to form a rough paste.
7. Wipe frying pan clean, add a tablespoon of oil to the clean pan, heat on medium-hot and place a tortilla in the pan.
8. Cover half of the tortilla with a handful of grated cheese. Add 1-2 tablespoons of sweet-potato mixture on top of the cheese and leave to cook for 2 minutes.
9. Using the spatula (or with clean hands) fold the tortilla in half in the pan and leave to cook for 1-2 minutes.
10. Turn the tortilla over and cook for a further minute.
11. Repeat for the remaining tortillas or until the cheese and sweet potato run out.
