

Spicy Bean Burgers

You need a good masher for this, and probably an apron as well. Meat eaters will probably end up preferring them too so use them as a tasty enticement. Bean burgers freeze well so make a dozen and eat them over the term.

Preparation time: 15 minutes. Cooking time: 12 minutes
Ingredients (makes 6-8 burgers)
200g-tin of chickpeas
200g-tin kidney beans
1 carrot
3 tablespoons of oil
2 tablespoons of flour
1 heaped tablespoon of tomato purée
½ teaspoon of chilli powder
A handful of breadcrumbs from a crumbled vegan loaf (approx. one slice) – a baguette is usually vegan
Salt and pepper

Large frying pan

1. Drain both tins of beans in a sieve and pour into a mixing bowl or saucepan.

2. Peel and grate the carrot and add to the beans.

3. Add chilli powder, breadcrumbs, tomato purée, flour, salt and pepper to mixture.


4. Mash together to form a rough paste.

5. Using your fingers, mould into burger shapes or beany squares.

6. Heat oil in a frying pan on medium-hot or 2 minutes.
Add burgers and fry for 5 minutes on each side. Serve on a bed of lettuce with some salsa or in a vegan bun.
