QUESADILLAS

Choose your favourite vegetables to go between the cheesy layers of this fantastically-tasty meal.

Cost per student: £1.50 (€1.70)

Preparation time: 10 minutes. Cooking time: 15 minutes. 

Ingredients

2 cloves of garlic, peeled and sliced

2 Spring onions, sliced

½ courgette, sliced

½ red pepper, deseeded and chopped

4 mushrooms, cleaned and sliced

½ teaspoon of Cayenne pepper

2 teaspoons of mild Salsa

150g grated cheese

Salt and pepper

 

Equipment

2 frying pans

Wooden spoon

Chopping board

Sharp knife

Spatula

1. Heat oil in frying pan on medium before adding sliced courgettes and carrots.

2. Cook for 5 minutes, stirring occasionally.

 

3. Add Spring onions, garlic and mushrooms and cook for a further 5 minutes.

4. In the other pan, on a low heat, place the taco inside and add a layer of cheese to one half.

 

5. Add vegetable mix on top of cheese and then some more cheese on top of the vegetables.

 

6. Fold tortilla in half, push down gently and allow to cook for 2 minutes until cheese begins to melt.

 

7. Flip over and cook for a further 2 minutes.
