

Pasta with Pesto
Pesto sauce (alla Genovese) goes well with spaghetti or linguini. If you have a liquidiser and a good supply of fresh basil, pine nuts, olive oil, garlic and parmesan, you can make it yourself but it will never taste as good as something from a jar.

Ingredients (serves 2)
300g Spaghetti or Linguini
100g jar of green pesto sauce
50g Parmesan cheese

Large saucepan
Sieve
1. Add a pinch of salt to a large pan of boiling water.
2. Add the spaghetti (125g per person).
3. After 8-10 minutes (see pack), drain over sink, saving a few tablespoons of the pasta water.
4. Return pasta to hot pan on a very low heat and add two tablespoons of pesto sauce (one tablespoon per person) and mix well.
5. Serve with grated cheese (parmesan) and a glass of Italian red wine.
