Iced oranges 

If anyone catches you making this for yourself, you’ll be laughed out of college so make sure you have a few friends over and prepare the frozen oranges the day before. You need a freezer compartment. 

Cost per frozen orange: 40p (€0.45) 

 

Ingredients (serves 4)

4 medium-sized oranges

80 ml (1/3 cup) water

100g (1/2/ cup) sugar

Orange juice (if the oranges aren’t very juicy)

 

Equipment

Saucepan

Mixing bowl

Wooden spoon

Sieve 

Freezer

 

1. Slice off the tops (1cm down) of the oranges, scoop out the flesh with a teaspoon and put into a mixing bowl. Place the empty oranges into the freezer.

2. Pour the sugar and water into a saucepan and warm for 5 minutes on medium heat until the sugar dissolves. Turn up the heat until the syrup bubbles and boil for 2 minutes. Remove from heat and set aside to cool.

3. After 10 minutes, pour syrup into measuring jug.

 

4. Squeeze the orange flesh through a sieve into a bowl and add to the measuring jug so that you have around ½ pint (300 ml) of liquid. Top up with water if necessary. Taste the mixture; if you like it sweet, add a teaspoon of sugar.

 

5. Transfer to a glass bowl or plastic tray and place in freezer for one hour before removing and stirring with a fork or a whisk to break up the crystals.

 

6. Remove oranges from freezer and spoon in the semi-frozen orange syrup until it reaches just below the top.

7. Put the top hat back on the orange and place back in freezer for at least 5 hours.

8. Just before serving, add a mint leaf or a bay leaf which looks remarkably like an orange tree leaf, as seen on the streets of Sevilla, Berkane or Monaco.
