CRAZY POTATOES 

(from the French word Ecrasé which means crushed).

A cross between mashed potato and a baked potato, this dish can be served at every meal for an entire term without the elation diminishing.

Cost per student: £0.60 (€0.70)

 

Preparation time: 2 minutes. Cooking time: 70 minutes

Ingredients

Medium-large potatoes (1-2 per person)

Knob of Butter

2 tablespoons of Oil

Salt & Pepper

 

Equipment

Microwave oven

Baking tray

Masher

 

1. Warm oven to 180°C/350°F

2. Wash and prick the potatoes all over with a fork and cook in a microwave on full power for 10 minutes. 

3. Remove and put potatoes on a baking tray. Gently crush the potato with a single downward force until it is half its thickness, the skin will burst and potato flesh will emerge like knees under a summer duvet. 

 

4. Add a splash of oil or knob of butter to each potato, sprinkle with salt and pepper and a bake in the oven for 30 minutes. 

5. Remove from oven, turn each potato over, add another splash of oil and return to the oven for another 30 minutes.

6. Serve on its own, with grated cheese or to accompany a main dish.
