Banana Pancakes
Perfect for breakfast, brunch or teatime, in fact, anytime you wake up and want a banana-flavoured snack. Serve with berries, cut-up peaches and a spoonful of natural yoghurt.

Ingredients (makes 8 chunky pancakes)
150g flour
2 tablespoons of sugar
1 tablespoon of baking powder
Pinch of salt
1 large banana
1 teaspoon of cinnamon
2 tablespoons of coconut oil
180ml of soya or almond milk
1 tablespoon of vanilla extract

1. Pour the flour into a mixing bowl and add the salt, baking powder, sugar and cinnamon. Combine gently with a wooden spoon.
2. In a separate bowl, add the cut-up banana and coconut oil and mash together with a fork to form a smooth paste.
3. Add banana mixture to flour mixture and combine with the vanilla extract.
4. Slowly add the milk, stirring all the time.
5. Add a tablespoon of coconut oil to the frying pan and when hot, spoon a dollop of the banana-flour mixture into centre of pan. Heat for 1-2 minutes and then flip over using spatula and cook the other side for another 1-2 minutes.
6. Serve with fresh fruit and yoghurt.
