BAKED POTATOES

A great comfort after a series of social disasters, exam failures, a romance break-up or just feeling homesick, the baked potato can rescue any evening. Can be done in the microwave but for a crispy skin, rub with oil before putting into a hot oven. 

Cost per student £0.60 (€0.70)

Preparation time: 8 minutes. Cooking time: one hour

 

Ingredients

Large potatoes at least as big as a tennis ball

Butter or olive oil

Pinch of salt

 

1. Turn oven to 190°C/375°F. 

2. Wash the potatoes, pat dry and prick with ten frenzied strikes of a fork. Put in oven for one hour. 

3. Remove, slice lengthways and add a knob of butter or olive oil, a pinch of salt and mash up the interior which should be fluffy.

 

4. Add anything from baked beans, grated cheese, grated carrot to yesterday’s warmed-up leftovers.
